Gut butter

Writer: Nathalie GudgeonNathalie Gudgeon

This homemade apple butter is like autumn in a jar—naturally sweet, gently spiced, and packed with gut-loving goodness. I love making a big batch when the apple trees are full, then using it to add extra flavor (and health benefits!) to muffins, cakes, yogurt, and warm oats. It’s simple, wholesome, and oh-so-delicious! 🍏✨

Ingredient Breakdown: Why Your Gut Will Thank You

Apples – Full of polyphenols, fiber, and pectin, which help support digestion and feed beneficial gut bacteria.

Water – Helps break down the apples into a smooth purée without needing any added sugars.

Cinnamon – A natural anti-inflammatory spice that can help regulate blood sugar and aid digestion.

Probiotic Powder (Optional) – Boosts the gut-friendly benefits even further by adding beneficial bacteria to the mix.

Tips for Nailing this recipe!

Use a mix of apple varieties. Combining sweet and tart apples gives a richer, more balanced flavour.

Don’t rush the thickening process. Stirring on low heat helps develop that deep, caramelised flavour without burning.

Store it right. Keep in an airtight jar in the fridge for up to two weeks or freeze for longer storage.

Add the probiotics when serving. Heat can kill off the beneficial bacteria, so stir in the probiotic powder after the butter has cooled.

Blackberry and pear crumble cake

Makes: About 2 cups of apple butter

Prep Time: 10 minutes

Cook Time: 30-35 minutes (including simmering and thickening)

Ingredients

12 apples, cored and peeled

1/2 cup water

1 tsp cinnamon

Optional probiotic powder to serve

Method

Start by peeling and coring your apples, chopping into small pieces, and adding to a pan with water. Bring to the boil and allow to simmer for 15 minutes. Allow too cool.

Once cool, transfer to a food processor and process on high until smooth. Transfer to a pan on a low heat and add 1 tsp cinnamon. Keep stirring until the puree thickens to make a butter, around 15-20 minutes. Transfer to an air tight container.

Before serving, add an optional probiotic capsule to the butter for a further gut boost!
