No bake Brownie

A rich, raw brownie to satisfy the chocolate lover without the fuss of an oven bake.


Ingredient Breakdown


Pecans – Pecans are a nutritious and flavourful tree nut that add a rich, buttery taste and satisfying crunch to a wide variety of baked goods. They are an excellent source of healthy monounsaturated fats, fibre, and antioxidants, as well as essential vitamins and minerals such as vitamin E, magnesium, and zinc. In baking, pecans enhance the texture and depth of flavour in recipes such as brownies, cookies, cakes, and pies, while also providing nutritional benefits. Their naturally sweet and nutty profile pairs well with ingredients like chocolate, cinnamon, maple syrup, and caramel, making them a versatile and popular choice for both sweet and savoury dishes.


Coconut sugar – Coconut sugar is a popular alternative sweetener in baking because it offers a mild caramel-like flavour that enhances the taste of cakes, cookies, and muffins. It is less processed than refined white sugar and retains small amounts of minerals such as potassium, iron, and zinc, although these are present in limited quantities. Coconut sugar also has a lower glycaemic index than regular sugar, which may result in a slower rise in blood sugar levels for some people. Additionally, it can often be substituted for white or brown sugar in a 1:1 ratio, making it an easy ingredient to incorporate into many baking recipes while adding a rich colour and depth of flavour.

Tips for this recipe

Switch up the nut toppings - you can use walnuts or pistachios.

Storage. Keep in an airtight container for up to five days in the fridge or it can be kept in the freezer for up to three months.



No bake brownie

Makes: 16 slices

Prep Time: 15 minutes

Make Time: 60 minutes

Ingredients

1/2 cup peanut butter

1/4 cup coconut sugar

2/3 cup oat flour (gf if needed)

1/4 cup cacao powder

1/4 cup plant milk of choice

1/3 cup chocolate chips

For the topping

150g 90% dark chocolate

1/4 cup peans


Method

Line a 20 x 20cm baking tin with parchment paper.

Combine and mix well all the dry ingredients.

Add the milk and fully combine.

Fold in the chocolate chips if using.

Press the mixture down evenly into the baking tin, firmly pressing down.

Melt the dark chocolate gently in a pan and drizzle evenly over the mixture.

Add the pecans to the top for decoration.

Allow to set in the fridge before cutting into equal slices.
